Waldorf Salad
Waldorf Salad: Submitted by: Kimmo Vallema | Date Added: 20 Dec 2020 Ingredients:

2 tablespoons (30 g) plain low-fat yogurt

2 tablespoons (28 g) mayonnaise

1 tablespoon (15 ml) fresh-squeezed lemon juice

2 teaspoons (13 g) honey, or to taste

3/4 teaspoon lemon zest

1 green apple, unpeeled and chopped

1 cup (150 g) green grapes, halved

1 stalk celery, sliced thinly

1/4 cup (33 g) chopped unsulphured dried apricots, optional

1/3 cup (40 g) toasted chopped walnuts or sliced almonds

6 cups (540 g) chopped hearts of romaine lettuce

Cooking Instructions:

In a small bowl, whisk together the yogurt, mayonnaise, lemon juice, honey, and zest and set aside.

In a large bowl combine the apple, grapes, celery, apricots, walnuts, and lettuce, dress lightly to taste with the yogurt mix, and scoop into a salad bowl.
