Apple Cranberry Compote
Apple Cranberry Compote: Submitted by: Kimmo Vallema | Date Added: 20 Dec 2020 Ingredients:

3 fresh, sweet cooking apples (Golden Delicious or Jonagold work well), peeled, cored, and chopped

1/4 cup (25 g) fresh or frozen cranberries

1/4 cup (30 g) dried, juice-sweetened cranberries

1/4 cup (60 ml) apple cider (or water)

3 tablespoons (45 ml) 100 percent maple syrup

1/4 teaspoon cinnamon

Cooking Instructions:

Place the apples, cranberries, cider, and syrup into a medium saucepan over medium heat and cover to bring to a simmer. When the mixture is simmering, sprinkle in the cinnamon and mix well to combine. Reduce the heat to medium-low, cover, and cook, stirring periodically, until the apples have broken down and the berries have softened, about 20 minutes. If the mixture gets too thick, add a little more cider to keep it wet. Stir well or use an immersion blender to achieve the desired consistency and serve warm, at room temperature, or chilled, over pancakes, waffles, French toast, or plain Greek yogurt.
