Orange High-Fiber Waffles

Waffles

1 cup (235 ml) unsweetened vanilla soy or almond milk

1 tablespoon (15 ml) apple cider vinegar

1/4 cup (20 g) rolled oats

1 1/3 cup (42 g) whole-wheat pastry flour

3 tablespoons (27 g) stone-ground cornmeal, fine grind

1 tablespoon (6.5 g) ground flaxseed

1 1/2 tablespoons (20 g) Sucanat, sugar, or xylitol

3/4 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon nutmeg

Pinch of salt

1 egg, separated

2 teaspoons (10 ml) almond oil (or other vegetable oil)

1 teaspoon vanilla extract

1 teaspoon orange zest

Cooking oil spray

Topping

2 cups (460 g) low-fat plain Greek yogurt

1/4 cup (60 ml) fresh-squeezed orange juice

2 tablespoons (85 g) raw honey, warmed to liquid, if necessary, or more to taste

1 1/2 teaspoons (3 g) orange zest

Cooking Instructions:

To make the waffles: In a small bowl, combine the milk and vinegar and stir to mix well. Add the oats and let the mixture rest at room temperature for 10 to 15 minutes.

In a medium bowl, whisk together the flour, cornmeal, flaxseed, Sucanat, baking powder, baking soda, nutmeg, and salt.

In a small bowl, whisk the egg white until frothy.

In large bowl, whisk together the egg yolk, almond oil, vanilla, and zest. Add the milk and oat mixture and whisk to combine. Add the dry mix to the wet mix and stir until just combined. Fold in the egg white and stir to incorporate.

Lightly spray a waffle iron with cooking oil and preheat. Using a cup measure, pour enough batter into the center to cover the iron to about 1 1/2 to 2 inches (3.8 to 5 cm) from the outer edge. Close and cook for about 4 minutes, or until the waffle is golden brown. Repeat with the remaining batter.

To make the topping: While the waffles are cooking, in a medium bowl whisk together the yogurt, orange juice, honey, and zest until thoroughly mixed. Top the hot waffles with orange yogurt, to taste.
