Protein-Powered Cheesy Onion Oats
Protein-Powered Cheesy Onion Oats: Submitted by: Kimmo Vallema | Date Added: 20 Dec 2020 Ingredients:

1 cup (235 ml) milk (low-fat cow’s, or unsweetened, plain almond or soy)

1 cup (235 ml) water

2 eggs

1 cup (80 g) whole rolled oats

1/4 teaspoon each salt and fresh-ground black pepper, or to taste

1/4 cup (26 g) ground flaxseed

1/2 cup (50 g) sliced scallion, optional

1/3 to 1/2 cup (40 to 60 g) grated Cheddar or feta cheese, to taste

Cooking Instructions:

In a large saucepan, whisk together the milk, water, and eggs until well blended. Whisk in the oats and bring to a low boil over medium to medium-high heat, continuing to whisk frequently.

Reduce the heat, cover, and cook for 10 minutes or until the oats reach the desired tenderness, whisking frequently. Season with salt and pepper, fold in the flaxseed and scallions, sprinkle on the cheese, remove from the heat, and serve.
