Breakfast Fruit Salad
Breakfast Fruit Salad: Submitted by: Kimmo Vallema | Date Added: 20 Dec 2020 Ingredients:

1 cup (230 g) plain low-fat yogurt

2 tablespoons (40 g) raw honey, warmed to liquid, if necessary, or 100 percent maple syrup, or to taste

1 tablespoon (15 ml) fresh-squeezed lemon juice

1 teaspoon lemon zest

1/2 teaspoon ground ginger, optional

1 Granny Smith apple, unpeeled, cored, and chopped

1 crisp sweet red apple, unpeeled, cored, and chopped (try Red Delicious or Braeburn)

1 crisp sweet ripe pear, unpeeled, cored, and chopped

1 large navel orange, peeled, sliced width-wise “around the equator,” and slices quartered

2 tablespoons (15 g) juice-sweetened dried cranberries

1/3 cup (37 g) slivered almonds

1 tablespoon (7 g) toasted wheat germ, optional

Cooking Instructions:

In a large bowl, whisk together the yogurt, honey, lemon juice, lemon zest, and ginger Add the prepared apples, pear, orange, cranberries, and almonds and toss gently to coat. Sprinkle with the toasted wheat germ before serving.
