Buffalo Wings

2 pounds (905 g) chicken wings (about 12), cut and prepared as directed (see below)

Salt, fresh-ground black pepper, and cayenne pepper, to taste

3 tablespoons (45 g) butter

1/4 cup (60 ml) high-quality hot sauce (such as Benito’s Old Bricktucky or Frank’s RedHot Original Cayenne Pepper)

2 teaspoons (5 g) sweet paprika

1/4 teaspoon each salt and fresh-ground black pepper

1/2 cup (120 ml) high-quality blue cheese dressing, optional

1 to 2 cups (150 to 300 g) sliced celery sticks

1 to 2 cups baby carrots

Cooking Instructions:

Preheat the oven to broil.

Sprinkle the chicken pieces with the salt and peppers (remember, a little cayenne goes a long way!). Arrange on a broiler sheet and broil for 8 to 10 minutes per side, or until cooked through and golden.

While the wings are broiling, in a small pan over medium heat, mix together the butter, hot sauce, paprika, salt, and pepper. When the butter has melted, whisk the sauce until well combined. Toss the hot wings with the sauce, to taste, and serve with the dressing and celery and carrot sticks.
