Spinach Squares
Spinach Squares: Submitted by: Kimmo Vallema | Date Added: 20 Dec 2020 Ingredients:

3 tablespoons (45 g) butter, cut into 4 pieces

1 cup (235 ml) milk (low-fat cow’s, unsweetened almond, or soy)

3 eggs

4 to 8 dashes hot sauce, to taste

1 cup (125 g) whole-wheat pastry flour

1/2 teaspoon salt

1 teaspoon baking powder

2 packages (each 10 ounces, or 280 g) frozen chopped spinach, thawed and well drained (squeeze or press into a double-mesh sieve to remove excess moisture)

2 cups (8 ounces, or 225 g) grated sharp Cheddar cheese

Cooking Instructions:

Preheat the oven to 375°F (190°C, or gas mark 5). Place the butter in a 9 × 13-inch (23 × 33-cm) pan and place the pan in the oven to melt the butter. Remove and set aside.

While the butter is heating, in a mixer beat the milk, eggs, and hot sauce, to taste, together until well combined.

In a small bowl, whisk together the flour, salt, and baking powder. Add the dry mix to the wet mix and beat until well combined. Add the spinach and beat briefly on low. Add the cheese and beat again briefly on low until incorporated. Spoon the batter into the pan and spread in an even layer. Bake for about 30 minutes, or until the edges and parts of the top are beginning to brown. Cool and cut into squares.
