1 cup (235 ml) unsweetened vanilla rice milk, unsweetened vanilla almond milk, or low-fat cow’s milk
1 cup (235 ml) low-fat coconut milk
2 scoops unsweetened, undenatured vanilla whey protein powder
1 pound (455 g) frozen mango chunks
12 ounces (340 g) frozen peaches
Juice and zest of 1 small lime, optional
2 to 3 teaspoons (13.5 to 20 g) honey, optional, to taste
1/4 teaspoon ground cardamom, optional
4 teaspoons (7 g) toasted coconut, optional, for garnish
Place the milk, coconut milk, protein powder, mango, peaches, lime zest and juice, honey, and cardamom into a powerful blender, such as Vita-Mix (if you don’t have a power blender, you may have to do this in smaller batches to cream the frozen fruit). Blend until smooth but not liquefied; you should be able to scoop it with a spoon. Divide evenly into 4 dessert bowls, top each bowl with 1 teaspoon toasted coconut and serve immediately.
