Spiced Cider
Spiced Cider: Submitted by: Kimmo Vallema | Date Added: 20 Dec 2020 Ingredients:

1 quart (946 ml) fresh-pressed apple cider, unsweetened

Juice of 1 orange

1 to 2 tablespoons (15 to 28 ml) ginger juice, to taste

2 tablespoons (40 g) mild honey, optional, to taste

6 cinnamon sticks

2 teaspoons (3.5 g) whole cloves

6 lightly crushed cardamom pods (or 1/4 teaspoon ground cardamom)

8 allspice berries (or 1/4 teaspoon ground allspice)

1/2 teaspoon nutmeg

4 unpeeled orange rounds (thin slices widthwise)

4 unpeeled lemon rounds (thin slices widthwise)

Cooking Instructions:

Pour the cider, orange juice, ginger juice, and honey into a large, heavy-bottomed pot over medium-low heat and stir gently to combine. Add the spices and stir again. Float the fruit rounds on the top. Partially cover and heat for 10 to 15 minutes, until hot, but not boiling. Reduce the heat to low, cover completely, and cook for another 15 to 20 minutes, until very fragrant. Stir gently again to incorporate the honey and serve, straining the cider through a double-mesh sieve, floating a fruit round or cinnamon stick in each mug, if desired.
