2 tablespoons (28 g) high-quality cocoa powder
1/4 cup (50 g) Sucanat, sugar, or xylitol, or to taste
1 teaspoon oat flour (or wheat), optional, for thickness
3/4 teaspoon cinnamon
1/4 teaspoon allspice
1/4 teaspoon ground cloves
Pinch of salt
1 cup (235 ml) water
3 cups (710 ml) milk (cow’s [low-fat for fewer calories] or unsweetened vanilla almond or soy)
1/2 teaspoon vanilla extract
In a small bowl, whisk together the cocoa powder, sweetener, flour, cinnamon, allspice, cloves, and salt. In a medium saucepan, combine the cocoa mix and water and whisk together over medium-high heat. Bring to a low simmer and cook, covered, for about 3 minutes, stirring frequently. Reduce the heat to medium and whisk in the milk. Cook until very hot but not boiling. Stir in the vanilla, remove from the heat, and serve.
