50 g Räucherspeck
30 g Butter
Salz
Pfeffer
1 Knoblauchzehe
2 Lorbeerblätter
1/8 l Weißwein
400 ml Fischfond
Schalotten, Kartoffeln, Sellerie, Karotten schälen. Lauch putzen, in Ringe schneiden, Gemüse würfeln. Tomaten brühen, häuten, vierteln. Speck würfeln, in heißer Butter auslassen, Gemüse dazugeben. Mit Salz, Pfeffer, Knoblauch und Lorbeerblatt würzen. Wein und Fischfond angießen. Kabeljau waschen, trockentupfen. Mit Salz, Pfeffer, Zitronensaft würzen. Fisch in Bräter geben, mit Gemüse bedecken, im vorgeheizten Backofen bei
170 Grad zugedeckt ca. 40 Minuten dünsten. Gehackte Petersilie drüberstreuen.
