800 ml Gemüsebrühe
60 g saure Sahne (10 % Fett)
Salz
Muskat
etwas Zitronensaft
Zucchini waschen und grob würfeln. Zwiebel und Knoblauch schälen und fein hacken. Margarine in einem Topf erhitzen. Zwiebeln und Knoblauch darin glasig dünsten. Zucchini zugeben und kurz mitdünsten. Gewürze darüberstreuen, mit der Brühe aufgießen und zugedeckt etwa 10 Minuten köcheln lassen. Gemüse mit dem Passierstab pürieren. Saure Sahne unterrühren. Mit Salz, Muskat und etwas Zitronensaft abschmecken.
