Ingredients

One 12- to 15-inch × 6-inch (30- to 38-cm × 15-cm) natural cedar grilling plank

3 1/4 cups (770 ml) apple cider, divided

1/4 cup (60 ml) apple cider vinegar

1/4 cup (85 g) honey

1 tablespoon (13 g) Sucanat or sugar

1/2 teaspoon dry mustard

1 wild Alaskan salmon fillet (20 ounces, or 565 g)

Salt and fresh-ground black pepper, to taste

Cooking Instructions

Soak the plank for at least 1 hour in 2 cups (475 ml) of the cider plus enough water to cover completely.

While the plank is soaking, prepare the glaze. In a small saucepan, whisk together the remaining 1 1/4 cups (295 ml) cider, vinegar, honey, Sucanat, and dry mustard over medium-high heat. Bring the mixture to a boil, stirring often to dissolve the honey. When the mixture reaches a boil, reduce the heat to a simmer and cook until it reaches the desired glaze consistency, about 15 to 20 minutes. Set aside.

Preheat the grill to 350°F (180°C) and sprinkle the salmon lightly with salt and pepper. Drain the plank and place on the grill, cover, and heat for 3 minutes. Flip the plank and place the fish, skin-side down, on the plank. Cover the grill and cook for 15 to 20 minutes (more or less time depending on the thickness of the fillet) or until the fish is nearly cooked to desired doneness. Do not flip the fish while cooking.

When the fish is nearly done, brush the top surface heavily with the glaze and cook for 3 to 4 minutes, or until caramelized and cooked to your liking (about 135°F or 57°C on a meat thermometer). Drizzle a little extra glaze over the fish before serving, if desired.
